Healthy Update

I am an avid Pinterest user, and pin a lot of recipes. Out of all of the recipes I have pinned, I've maybe actually MADE 10 of them. Most of the time when I do pin things, it's "for future reference" like if I were to have a dinner party in my tiny apartment, or make something for a pot luck or something. When I saw this recipe I knew I needed to make it RIGHT away, and what made it even better was that I had ALL of the ingredients on hand!

Hummus Crusted Chicken

I love that it is a super quick prep time meal, and I get my meat and vegetables in one dish! You can totally mix it up by trying different flavors of hummus. Here's how mine turned out:

I am currently on Day 16 of my 24 Day Challenge! I have been super focused this time around, but last night totally got the best of me! I am reading Jillian Michael's book, Slim for Life, and tried to follow her 2 drink per week rule, but my work colleagues are bad influences! I ended up having 3 drinks, and taking bites of people's delicious fried pickles and nachos! With that said, I definitely hit the ground running today in working out by doing my Ease into 10K workout and my Jillian Michael's Kettle Bell workout. (Can you tell that I'm obsessed with Jillian Michaels?)

I'm running in a 10K Mud Race on June 1st! It's 9 weeks away and I am hoping that the urgency of training for this keeps me going on losing weight/living a healthy lifestyle. There are 25 obstacle course to get through in this race as well, so stay tuned to hear how I'm training for it!
Here's a Preview of what I will be doing with my good pal Cassandra (my friend that walked the 3 Day with me) and Rachael (my friend I lived with in Little Elm)!!!
